Super Tasty Salad
2-3 romaine lettuce hearts, cut into 1” pieces
1 red bell pepper, cut into 1” pieces
1 cucumber, thinly sliced
1 medium tomato, cut in eights
2 cloves of garlic, minced
1/4 cup red onion, thinly sliced and cut into 1-inch pieces
1/4 cup cold-pressed extra-virgin olive oil
1/4 cup very fine red wine vinegar
3 teaspoons Romano cheese
Sea-salt
Freshly ground pepper
1/4 cup canned chickpeas
Directions:
Place the romaine lettuce hearts, bell pepper, cucumber, tomato, and onion in a salad bowl.
Combine the olive oil, red wine vinegar, cheese, minced garlic, salt, and pepper in a screw-top jar and shake well. Drizzle the dressing over the salad. Add the chickpeas and toss well.
